Mexican refried beans!

Serves: 6
Cooking time: 25 min
Ingredients:
* 250g of black or pinto beans (cleaned)
* 1 garlic clove
* 1/4 sliced onion
* 1 teaspoon of olive oil
Additional ingredients:
* 1/4 of onion finely chopped
* 1 teaspoon of olive oil
* Sea salt to taste
* 1/4 teaspoon dried epazote (optional)
* Feta cheese (optional)
Procedure:
1. Soak beans overnight (ratio should be 1/3 of beans and 2/3 of water)
2. The day after,rinse the beans under cold water
3. In a pressure cooker add water (ratio should be 1/3 of beans and 2/3 of water), garlic, onion, olive oil, secure the pressure cooker lid and cook for 12 min.
4. Remove from heat and let it cool down
5. Drain the beans, do not discard the beans water
6. In a saucepan at low heat add the olive oil and onion, stir until golden
7. Add the beans and epazote, gently stir until simmering
8. Add 1 cup of the beans water and blend
9. Season with sea salt and serve
Serving recommendations:
* Garnish with feta cheese and serve with corn chips
* Refried beans are a perfect side for most Mexican dishes
