Banana & Orange cupcakes!

Serves: 16
Cooking time: 40 min
Ingredients:
* 110 g of butter at room temperature
* 1 cup of sugar
* 2 large eggs
* 1 cup of mashed banana
* 2 tablespoons of orange juice
* 1 teaspoon of vanilla extract
* 1 cup of plain flour sifted
* 3/4 cup of wholemeal flour sifted
* 1 teaspoon of baking powder
* Pinch of of sea salt
* Orange zest
* 3/4 cup of goat milk kefir yoghurt (can be replaced with standard yoghurt, buttermilk or milk)
Procedure:
1. Preheat oven to 180C
2. Grease the cupcakes tray
3. Mix the butter and sugar
4. Add eggs, one at a time
5. Add the banana, orange juice and vanilla
6. Mix both flours with the baking powder and orange zest
7. Slowly incorporate the flour alternating with the yoghurt
8. Bake for 20 min
9. Test with a cake tester or a wooden skewer. If the skewer doesn't come out clean, bake for 2 more minutes until the skewer comes out clean
9. Remove cupcakes tray from the oven and let it cool down
10. Transfer cupcakes to a cooling tray. Enjoy!
